A lovely summer display of a variety of colors, shapes and sizes of tomatoes at a New Jersey Farm Stand including cherry tomatoes and heriloom tomatoes. There is nothing to compare to the scent and taste of freshly picked fruit and vegetables. Nutitional benefits of tomatoes: All varieties and colors of tomatoes are low in fat and calories, high in fibre and a source of many vitamins and minerals. Red tomatoes re packed with lycopene, an antioxidant that gives them their red color and may have a role in lowering of cancer risk for cancers such as prostate, lung, color, esophagus, breast and skin. Tomatoes are also a great source of vitamins A and C although more so when eaten raw. The more red in the tomato, the more beta-carotene it has which is converted to vitamin A. When tomatoes are cooked, their water content evaporates with the result that they become more concentrated and therefore a richer source of lycopene than fresh tomatoes. Better still, our bodies are able to absorb more lycopene from cooked or processed tomatoes such as ketchup, puree or sauces. So whether you favor the bite sized cherry or grape tomatoes, slices of a big ripe tomatoe in salads or a sandwhich, of enjoy your tomatoes in a home-made tomatoe sauce - they are a great, healty addition to your diet.
