Beautiful apricot blossoms like these are among the first welcomed signs of spring in the North Fork Valley. I was surprised to learn that these blooms are edible with a mild apricot flavor as well as a sweet floral aroma. They can be used as a garnish, added to salads, and floated in drinks. Apricot trees are native to the Himalayan region of northern china and other temperate areas where they symbolize �timid love� and may be given as a gift from an admirer. The blooms in these photographs are actually those of a peachcot tree which, like the apricot is an early maturing fruit tree that bares a very flavorful peach with apricot characteristics. Because of the excellent flavor and larger size the ripe fruit makes great jam when they survive spring freezing, which more often than not destroys them at our high altitude. In our valley apricot trees provide a glorious display along the waterways and roads where they profusely grow wild.
