Description

Hīhīmanu Mountain is reflected in the still waters of one of the ponds of the Hanalei kalo lo’í. The lo’í or irrigated terrace is the vast paddy that feeds and nurtures the kalo. These colorful paddy’s are harvested year around and the taro farmers work relentlessly in knee deep mud and battle such enemies and apple snails and droughts to maintain lush productive fields.
Kalo is the Hawaiian word for 'taro'. Kalo was one of the canoe plants brought by the ancient Hawaiians and has been a staple from then until today in cuisine of Hawai'i. The root of kala is what the what poi is made from. Roots can also be baked, or ground into flours to make bread. Kalo leaves are used in many delicious local dishes, including squid luau, laulau and many types of stews and soups. The leaves contain high levels of calcium oxalate and can cause harm if eaten raw, but are wonderful when boiled to remove the toxin.
In this image, the kalo are newly planted kekis (new shoots) that are planted by hand. Eventually the plants will grow so large that the leaves cover the pond and no water can be seen.
