This macro zoom photo of crawfish, or crawdads, a New Orleans favorite seafood. The crawfish are boiled with spicy seasoning, corn, potatoes and smoked sausage. When the crawfish come into season, they are consumed by locals and from visitors from around the world, they are caught in the wild or grown on aquatic farms. This favorite seafood of all local Chefs and abroad are sauted, fried, boiled to create some of the finest Southern Dishes in the South. The procedure is rip the heads off suck on the delicious juices and then discard and rip open the tail where the delicious part is consumed. Some find it a chore to get to the fleshy tail but there nothing like eating crawfish like New Orleans style....Local and tourist buy them by the pound or better yet the sack, a worthy reason to have a friendly gathering or attend one of the many crawfish festivals held locally or throughout the state or south.
