I like to grill vegetables in the oven. This batch came out of the oven with a yellow pepper that put a smile on my face. Check it out in the lower right corner.

This color photo shows a cookie sheet filled with healthy grilled vegetables covered in olive oil. For even distribution of the olive oil, I pour a generous amount into a Ziploc bag then add raw vegetables, close the bag, and shake to distribute. Bake at about 400 degrees until vegetables are browned to your liking--or about 20 minutes.

Some people line their pan with parchment paper, but I’ve found this is not necessary. They also drizzle the olive oil on top of the vegetables on the pan, but I’ve found it works best to shake them in a closed bag with olive oil, and dump them onto the cookie sheet.

You can use the same bag for all of your vegetables. Just make sure to coat them with plenty of organic olive oil. If you follow these simple steps, you can skip the parchment paper, and you won’t even have to turn the vegetables as they roast in the oven. So simple and healthy.

The vegetables shown here are red, orange, green, and yellow peppers, cut in chunks or left whole depending on size. Also, purple onion, parsnips, carrots, and Japanese eggplant from my garden.
