Description
I thought I had found a mutant dandelion…a perfect puffball only it was at least 4” across! They say everything is bigger in Texas, right?! Reining in my enthusiasm I searched a bit to discover that this is likely something called Western Salsify. The root is supposed to be edible especially so you can fry, roast or boil it, being compared to turnips. OK, maybe not. Others say they slide down like oysters (hence once of its nicknames, oysterplant). OK, still not attracting me in the culinary department. How about ‘cream the roots in a soup or simmer young stalks in butter for a side dish rich in Vitamin B6’? I’m still not convinced it’s not a Texas mutant so I’ll pass on eating it.
