New Year's Puffed Apple Pancake

I have been making this pancake since the mid 1980s. I used to only make it on New Year's day or Christmas day or a birthday. Or some other festive time. I've altered it over the years, using different fruits, substituting GF flour, sometimes almond milk and coconut palm sugar. I always kept the butter. And yes if deflates but it still tastes great. And we have reheated it for another breakfast.
