Description
Row upon row of dryland kalo is a sea of giant-leaved plants nodding in the breeze. Kalo, known as taro around the world, is a staple plant on nearly all islands in Polynesia. Hawiian kalo is world-renowned. Boiled roots are pounded then fermented with water to make the iconic Hawaiian dish poi, ground into gluten free flour,used as potato or sweet potato substitutes, boiled leaves used to wrap lau lau, are added to succulent squid luau.
