Description
Mardi Gras is a bit different in Acadiana than it is in New Orleans. Instead of balls, beads, royalty, floats, and parades we have men in costumed made of straps of fabric to make them look poor so farmers will give them chickens to make a gumbo to fatten them up so they can make it through 40 days of fasting. The farmers are entertained by the Mardi Gras riders, who dance, sing, do tricks, and beg in most amusing ways telling about how poor they are and how bad they need their chicken for the gumbo. The compassionate farmers release a chicken or two and then the Mardi Gras chase the chickens where ever a chicken might run or fly: up trees, under houses, through ditches, on.roofs....It is a tradition that dates back many years. My grandmother who would be about 135 years old today told me her parents and grandparents told her about their Courir de Mardi Gras fun chasing chickens. A community gumbo is made with the chickens captured and in small communities it is a tradition to bring bowls to the elderly and those homebound so that no one misses out.
